Thi says this course helped her clarify her goals – and secure the job she wanted straight away! Now a nutritionist specialising in weight management, Thi is establishing her own clinic at a pharmacy. When she enrolled at TAFE Thi had just completed a Bachelor of Medical Science at UTS. “The TAFE course in nutrition is a great way to gain a formal qualification in a short time (only six months at TAFE as opposed to three years at uni); and it is practical, industry-focused training so you can go straight into the work you want to do,” says Thi.
Thi aims to take a holistic approach in her weight management business; to make a difference in the local community and promote healthy eating and lifestyle habits. She wants to focus on consultation to “help people utilise what they have in their food and culture, to make positive changes in their lifestyle and health.”

Whilst Geneviere was working at a restaurant in Bondi, her employer told her TAFE was the way to go to get great qualifications and experience. “I absolutely loved TAFE,” she says. “It was real – the teachers are in the industry and their knowledge is current. I love cooking and learnt so many new techniques from them. The Apprentice, our training restaurant at TAFE, gave me first hand experience in so many facets of the hospitality industry, and access to all the best ingredients. I just opened my own restaurant with three other people, specialising in modern Australian food in Gordon. I wouldn’t be doing this if I hadn’t received such great training and experience at TAFE!”

“I enrolled at Ultimo because of their new hospitality training centre,” says Christine. “We trained in a real working restaurant, which taught me to think on my feet. The teachers were dedicated, and wanted us to become the best people in the industry. “Doing this course has given me the opportunity to go from being kitchen hand right through to chef where I work at Jimmy Recipe, at The Galleries Victoria in the City. “Now I’m co-writing a Malaysian cookery book with my employer. We plan to expand into packaging and selling pastes, e.g. laksa, which we make to the public; and to create a Malaysian food website. We want to grow Malaysian food in Australia until it becomes as popular as Thai!”
Sanam Rezae
Advanced Diploma Hospitality Management

"I’m currently enrolled in the Bachelor of Hospitality Management program at Ultimo College" says Sanam. "The course started this year and is offered jointly by Sydney Institute and The University of Ballarat.
"In today’s competitive marketplace, I felt that I needed a bachelor degree in order to obtain a senior management position in hotels. I was unable to gain an entry to university with my UAI, however, one way to get to university – without a UAI – is through the Advanced Diploma Hospitality Management. This qualification is a pre-requisite for entry to the degree program.
"I completed the Advanced Diploma Hospitality Management last year and enrolled in the degree program this year. Workshops are held once every three weeks at Ultimo College and there are regular on-line tutorials to reinforce what we study in the classroom. It’s an applied course and workshops provide an opportunity for us to learn from the experiences of others in the group. The course will help me achieve my career goal to be a general manager of a hotel".
