| Since its foundation in 1892,
TAFE NSW - Sydney Institute has provided training and
education for literally hundreds of thousands of students,
many of whom are now leading industries and organisations.
As the oldest and largest vocational education and
training provider in Australia, the Institute calls
upon a long history of educational excellence and diversity.
The Institute delivers 758 courses to more than 63000
students annually, and has a large international student
population due to its proximity to Sydney's central
business district.
Around 3000 staff members are employed across the Institute's
six Colleges. It has centres of excellence in Aviation,
Baking Trades, Engineering, Fashion Design, Graphic
Arts, Information Technology, Marine Technology and
Multimedia.
The Institute local catchment area covers some of the
more densely populated suburbs of Australia's largest
city - Sydney; including Chippendale, Enmore, East Sydney,
Randwick, Petersham and Ultimo. The area has a population
of around 510 000, and is characterised by high levels
of cultural diversity and migrant settlement.

The Institute was one of the first TAFE NSW Institutes
to successfully seek certification by the International
Organisation for Standardisation (ISO), ensuring we
are at the forefront in maintaining integrity of our
quality control systems. Our rigorous Quality Management
System was recommended for Certification as an achiever
of international standards in Quality Management Systems,
as specified by ISO Standard 9001: 2000.
Additionally TAFE NSW - Sydney Institute has formalised
links between universities such as University of New
South Wales, University of Technology, Sydney, Macquarie
University, University of Wollongong and University
of Western Sydney, where students can receive substantial
credits towards university degrees following successful
completion of a TAFE NSW - Sydney Institute course.
The Institute is reknowned for its educational excellence,
and also for the success of its students. The students
regularly win national and international competitions,
with 17 students winning state medals last year, Luke
Montgomery taking out the prestigious title of NSW Vocational
Student of the Year, students from the Institute represented
Australia in the worldskills competition in Korea and
the Institute won 3 national awards for marketing excellence.

| Leading retail bakery chain,
Bakers Delight, joined forces with TAFE NSW - Sydney Institute
in late 2001, to create a state-of-the-art centre for
bakery training at its Ultimo College.
The Centre, located in the Marcus Clarke Building of
the Institute, is called the TAFE NSW - Sydney Institute,
Bakers Delight Daryl Williams Centre of Excellence.
Named after the late Daryl Williams, an inspirational
franchisee and Bakers Delight staff member who contributed
to the development and growth of Bakers Delight, the
Centre will provide relevant training for more than
2000 trainees, franchisees, and apprentices.
According to TAFE NSW - Sydney Institute Director,
Marie Persson, the Centre forms an integral part of
the future training of Bakers Delight staff.
"The Centre has been fitted out with the same
ovens and equipment as a fully commercial Baker's Delight
kitchen, so students of the Centre will receive explicit
instructions about working with Bakers Delight,"
Ms Persson said.
"In addition to this, the Centre has been built
as a teaching centre, with an internal classroom, baking
facility and shop-front for retail bakery training purposes."

Technical specifications of the Centre
2 Moffat Rotel 2 ovens have been installed in the bakery,
as are currently used in operating commercial Bakers
Delight bakeries.
The total area of the Centre is 190 square metres,
comprising a classroom, mock retail area and bakery.
The bakery is 132 square metres, and comprises sundry
stainless work benches, 7 sinks, Mistubishi electrical
air conditioning and extractor fans supplied by FanTech,
as per the technical specifications of an operating
commercial Bakers Delight kitchen
A 36 square metre classroom has been built off the
bakery area, next to a 22 square metre mock retail area.
Both these sections will be used by franchisees in other
training, such as retail management and retail operations.

The Daryl Williams Centre of Excellence has been designed
to mirror an actual Baker's Delight store. Students
learning at the center will train on Baker's Delight
equipment using Baker's Delight recipes and materials.
To meet the training requirements of the Baking Trades
Training Package, students will also be shown and practice
non-Baker's Delight products. We feel this give our
students are more rounded educational experience.

As demand for places is very high, students will be
offered places at the center on a first in best-dressed
basis. As each application is sent
electronically to us, it is date and time stamped
and those who apply early will have a better chance
of getting their preferred day and shift.
Unfortunately we cannot guarantee that sending an application
will automatically reserve a place in the course.
